It is in the Bible. There are many parables about the olive tree. Most of them use the olive tree to represent God. He is the true vine, Christians are the branches. If the branches do not bear spiritual fruit (love joy peace patience kindness goodness faithfulness) they will be cut off and thrown into the fire.

In Noah's ark, a dove was sent to find land. It eventually comes with an olive branch in its mouth. Extending an olive branch to someone is offering them peace.

An olive branch was what the dove brought back to Noah to let him know that the flood was over. It's a sign of change.
