A 'class of poultry' is a just a grouping of breeds of poultry. For example all types of turkey are considered as one class, while there are many classes of chicken as there are many many more breeds of chicken. It is not a scientific term and classes are often defined by breeder groups or associations.

It is possibly the quality of the poultry or it could also mean that poultry is separated into different groups based on certain features that they may share like taste and texture. It could also be a category for how the poultry was prepared or handled, whether it was caged or allowed to roam free.
