Beating an egg and dropping it into a hot consomme will result in the shreds of beaten egg adhering to particles in the consomme. When the egg is removed, as with a slotted or mesh spoon, the cooked egg will take with it the particles that cloud the consomme, leaving a clear product behind.

You make a "raft" out of a mixture of eggs, breadcrumbs, whatever protein you are using as the base, and spices. This will pull out any impurities.
