Turning the water heater off overnight won't save energy because it will have to work harder when you turn it back on in the morning. Try setting the unit at 120 degrees (instead of 125-140 degrees), which will help save money on your utility bill. When you replace the unit, check out the new energy-efficient models.

Yes of course it will save energy. When you are switching off it will not consume your power. Its better to save energy.

Not really, because when you get up to turn it on it will run longer than usual to heat the water. Your best bet is just to turn it to a low setting and keep it there all the time. If it seems to be running often, you can look into getting a heater cover to help insulate it better.

Yes certainly turning off your heater in night and when you don't have a use of it will save more energy.
