Why would a check engine light come on in a Ford Escort?

It could be a number of things from the PCV valve to an oxygen sensor in the exhaust. It's probably something in the emission control systems. Take it to a shop and have it scanned, they'll tell you what's wrong and how to fix it.

An engine can have a problem but still seem to run correctly. Sometimes it indicates that there is an issue starting to occur that can cause poor running in the future. Either way you need to fin out what the code is and repair whatever the problem is. Either have a mechanic check it out or read the codes yourself.
