Why does meat shrink when it is cooked?

The primary reason meat shrinks when it cooks is because the fat "melts". The melting point of the fat is lower than that of the remainder of the meat, so it is released during cooking of the meat. Also, meat is primary muscle tissue (and some soft tissue), which is maleable at higher temperatures..

Meat shrinks when it is cooked because the water content in the meat melts when it get heat.So we need not add more water.
