Why did she say she didn't want anything serious but then started dating someone else?

There are two possibilities. The first is that she was telling you a white lie to spare your feelings, and that she just did not want to be with you. The other possibility is that her new relationship is not serious; just because people are dating does not mean that either views it as a long-term arrangement.

She wanted to let you down easy without hurting your feelings. She probably had feelings for this other person while was with you.

She is rebound dating. This is very common. When a committed relationship ends it's difficult to break out of the pattern of being in a relationship.

I would say that she was probably not into ya'll relationship and that is her excuse and easy why to break it off and than at the same time she was probably already talking to that guy.

There are a few answers to this question and nobody can be certain why but the lady in question. Either she lied to you or the other relationship is not serious.
