Wait till they are completely orange for a few days. After they start turning, they may seem slow at first but then the outiside color will quickly become bright orange. Wait a little longer though - the inside might still be green if you pick it too soon.

It's best to wait until the peppers vine ripen and turn from the green color. However, it is possible to pick them when they're just starting to turn colors and ripen them inside as most people do with tomatoes. They just taste better vine ripened!

Your habaneros peppers have reached full maturity and will be their hottest when picked when they are yellow-orange. Be careful when picking your peppers, the oil can burn your skin
