What should I know about mayonnaise safety?

I am scared of mayonnaise and want to be sure I handle it properly.

The easiest way to make sure mayonnaise stays safe is by putting back into the refrigerator as soon as you're done using it. It shouldn't ever stay out long enough that it becomes room temperature. You should also throw the jar away after 3 months of opening it.

Years ago, when mayonnaise was prepared from scratch, the use of unpasturized eggs may have caused Salmonella contamination. Today, commercial mayonnaise is prepared using ingredients such as pasteurized eggs and salt; Vinegar and lemon juice create an acidic environment that stop bacterial growth. It can be stored at room temperature, but refrigeration ensures quality. Safe food handling avoids cross contamination.

I think mayo is one of the safer products I can be using, but it should be stored in shallow covered non-metal pans for storing foods made with it, because after long use and storeage I have found pitting of the pans and it means 1 thing, no metal pans.

There is nothing wrong with mayonnaise. It cannot harm you in any way. Some people even use it for other things besides eating. The only thing to remember is to never leave it out over night or for long periods of time. Dont set it out in directly sunlight.

Many people feel that mayonnaise pose big food safety risks. Actually, store bought mayo is quite safe if refrigerated after opening. The high acid and salt content impairs bacterial growth.

As long as you keep it in the refrigerator, mayonnaise is not dangerous. It is made from eggs, so do not do anything with mayonnaise you would not do with eggs, and you'll be fine.

Mayonnaise is not overly dangerous. The only thing you need to do is ensure that it does not get too warm for too long of a period of time. Mayonnaise is basically made of eggs; any precaution you would take with eggs, take with mayonnaise.
