You begin with deciding on the terms of what the contractor cannot do. Then add additional clauses such as 'In addition to not engaging or opening said business the contractor also agrees not to engage in work that would a conflict of interest.' Also such things as 'Non consultation of competitors' Then end with the penalty of breach of contract.
