There are many reasons why added fats are in many recipes. The first reason is because there are many fats that add flavor to food. The second reason is that, contrary to what many believe, there are some fats that are actually good for you and provide health benefits.

Unfortunately, fat added to a recipe makes it taste better. Additionally, without fat, pancakes would stick to the pan, as would cake and cupcakes, and almost any baked food. We can't eliminate all fat because our bodies need a certain amount of it to operate properly.
