Since butter is what makes a yellow cake a yellow cake, it is going to be difficult to find a recipe without butter in it. What I would suggest is to get your favorite yellow cake recipe, and substitute it with margarine, or an olive oil margarine. you are still going to have fat, but it will be healthier.

I don't whats worse, the oil or the butter. You can substitute butter for oil, and you can substitute eggs with yogurt. I have also heard of using apple sauce instead of oil. This make a more dense cake, like carrot cake. The best this to do for the yellow cake is to not frost. Sprinkle powered sugar for frosting.

You can actually substitute canola or vegetable oil in place of the butter. Other than you can use honey instead of white sugar, egg whites instead of whole eggs, whole-wheat flour and sweet spices such as cinnamon or nutmeg.

There are many butter substitutes that are much healthier. I love Earth balance, but there are many to choose from.
