The substitute one uses depends the recipe. In candying-making one might use pancake syrup but not maple syrup because of a slightly bitter flavor that might left behind. Other substitutes include honey, and a mixture of brown sugar (light for light, dark for dark) and water.

Corn Syrup is not all bad, but if you need to replace it then try Honey if you need it to be thick, otherwise boil water and sugar until it thickens enough to use as a replacement. 1 c. sugar and 1/4 C. water equals 1 Cup corn syrup. Hope this helps!

Maple syrup works for some things, if diluted by about 50% with water. It has less calories, too. Corn syrup is pretty much pure sugar anyway.

Honey is a very good substitute for corn syrup. If it is not available, try sugar with a little water to simulate the corn syrup consistency. You could also use pancake syrup.
