Baking soda is mainly used as a leavening agent. Therefore, your cookies will become puffier and lighter in texture than you intended. You may also notice an increased bitter flavor.

Since baking soda has such a strong taste it would be best to start the cookies again if you have added too much. Otherwise they will be disgusting.

If you use too much, your cookies will have a strange bitter taste, soft texture, and will not be popular. Make another batch of dough (no soda) and mix!
