Wagyu is a kind of beef that comes from Wagyu cattle. The cattle was once raised only in Japan, but now raised outside Japan as well. The cattle are raised to produce a premium cut of meat with superb marbling. The meat is expensive and usually graded "12" on the marbling scale of 1-12.

It refers to Kobe beef, or very high quality Japanese beef. The kanji literally means Japanese cow. It is pretty expensive.
