What do the pedals do on a piano?

The left pedal makes the notes sound slightly softer. The middle pedal can sustain one note while allowing others to sound normally. The right pedal sustains all notes played. The right pedal (called a sustain pedal) is used the most, and is important to have on a keyboard.

The far right pedal makes the chords sound loudly and richly. The far left pedal produces a more muted sound than normal.
