There's suggestions online to make hashbrowns, omelets, and a lot of cornbread ideas using a waffle maker, however, they are pretty limited! Google for ideas, but I suggest you start with the waffles, and be very inventive on what you can do with them, they don't have to be breakfast.

With a waffle maker we can make brownies, cookies, homemade ice cream cones. I have heard that we can grill the sandwich and hamburgers with waffle maker.
