What can be used as an alternative to the thai Pandan with the same results?

There is no exact substitute for the Pandan leaf but my husband who is chef trained says that you can try bay leaf with a little bit of dried basil or tarragon added. If you try to use the tarragon go very light with it since it is very strong.

For dessert recipes you can't really use an alternative to the Pandan leaf but you could look for either the extract that was mentioned below or you can get a Pandan paste at most oriental or gourmet food stores. Ask a clerk for Koepoe-Koepoe or the durian pastes.

If the recipe you are using calls for the food to be wrapped in the Pandan leaf you can use a banana leaf, parchment paper or even wax paper as a supplement though I think the banana leaf would be best. Most asian stores carry at least the dry leaves.

For those who don't know, Pandan is a leaf that is added to stews, sauces and marinades to add flavor. The leaves can be fresh or frozen - but if you can find those at a local asian market, you can use the extract. Pandan is also called "Screwpine")
