What are the best oils for deep frying?

There are a lot of choices; I don't know which one is best.

With all the knowledge we have of heart disease a number of different opinions are out there. Personally i use Canola oil for general everyday frying. To achieve different taste and levels of crispness you can experiment with Beef fat and also duck fat. Both of these options can prove costly.

I've found Canola oil to be best for frying most things. Vegetable oil also works well, but I'd still go with canola.

The best oil for frying, by far is lard. It infuses excellent flavor. However, many have strong objections to its use. The next best oil for frying is peanut oil.

There is no single best oil for deep frying. The healthiest is a smart balance variety with omega-3, but that is not always the tastiest. Canola oil is one of the lightest and leaves very little aftertaste. Olive oil is probably the strongest tasting and only recommended for certain items.
