A kernel grain is composed of three parts. These three parts are the endosperm, which makes up approximately 80 per cent of the kernel; the bran, which makes up appoximately 15 per cent of the kernel; and the germ, which makes up the remaining (approximately) 5 per cent of the kernel. Note that percentages are estimates only.

The solid outer shell is called the bran. The germ is the part that will sprout into a new plant. It is rich in nutrients. The biggest part is the endosperm. It is made up of mostly starch.
