Make sure you have both red and white wines, and taste the whites first. Also have bread on hand to cleanse the palate between sampling different wines. Pairing cheese with specific wines is a very popular activity, other items that go well are chocolate and nuts.

Have very small samplings of wine offered so that people get the flavor but not drunk. Provide many finger foods in small serving sizes to encourage people to eat throughout the event, reducing the odds of getting drunk instead of enjoying the tastes.

Have an exceptional array of wines(dry/sweet/white/red), as well as foods to compliment them. Rich desserts, chocolates and cheesecakes, as well as all kinds of cheeses, from 'stinky' brie and goat cheese to softer or sharper, like mozzarella or aged cheddar. Have ginger or a different pallet cleanser. Start with lighter wines and work towards more poignant.
