I use a wooden mallet or metal one to flatten chicken breast or to pound round steak. I have a rubber mallet to use when working with tongue and groove flooring.
Use a wooden mallet to strike a chisel -- especially woodcarving and stone cutting tools or chisels. Use a rubber mallet to strike posts, pegs, and other items you do not want to ding with a hammer.
