I love to make guacamole when I fry chicken tacos. I put it on top of the chicken tacos with sour cream and lettuce. I also use guacamole in taco salads. I use guacamole for lots of dishes as a side with taco shells or chips. I also have tried it with enchiladas and stuffed peppers.

Guacamole is very versatile. I like to use it as a dip with a variety of raw vegetables: red pepper strips, celery or carrot sticks, jicama slices, etc. It's also great with tortilla chips, of course, and don't forget to use itas a spread in sandwiches and wraps. Heck, I could just eat it with a spoon!

My favourite would have to be nachos. I prepare the chips by laying them out on a baking tray then adding a layer of refried beans, salsa, guacamole then some grated cheese. Bake it for about 15-20 minutes at 180 degrees c, or until it looks like the chips around the edge are starting to go brown.

You can put it on burgers, hot dogs, sandwiches, use it as a dip with chips and other vegetables, and put it on tacos.

Guacamole can be eaten for breakfast with scrambled eggs or an omelette. For lunch in your sandwich with turkey meat and/or cheese, you can use it as sandwich spread. You can serve with roast meats, grilled shrimps and fish, or even a quiche for dinner, You can even use in a rice salad.

Plain corn tortillas are fat-free and high in fiber, and taste very nice when slathered with guacamole.
