What are 2 characteristics that indicate a finfish has been cooked to the proper degree of doneness?

The flesh of the cooked fish lifts completely off the skeleton when uplifted gently with a fork. The skin should be crinkled if the fish has been baked; if the fish has been steamed or boiled the skin should be tighter than the skin of a raw fish and slightly shrunken on the bones.

The proteins in the fish need to be firm and the fish flesh must fall off the bones when cooked properly.
