How long must wine ferment?

Wine fermentation can take varying lengths of time. A cold fermentation can take months, a hot fermentation can take just a few days. For a dry wine, the fermentation will last until all the sugars are converted to alcohol by the yeast.

Wine fermentation has two stages. The Primary stage lasts between 4-7 days. This is when up to 70% of the fermentation takes place. The Secondary stage lasts between 2-3 weeks. So the entire process can take up to a month and remember to allow time for the yeast to clear which can mean an additional two to four weeks.

Wine can ferment anywhere from one year to twenty. More expensive wines will have been fermented for longer. The better tasting wines will also ferment for longer period of time.

Red wine can take 1-2 weeks for the initial fermentation and an additional 1-2 weeks for the secondary fermentation process. It can vary a lot by maker though.
