How likely am I to get sick from eating food that was left out over night?

It depends on what type of food you left out and the temperature of the room. For example, anything with mayo on a hot day spoils very quickly and is likely to make you sick or worse. Food poisoning is often the result of food that was simply left out too long.

If the food is fruit or bread, then it is safe to eat. If the food is one subject to spoilage, such as meat, milk, dairy, or egg based products, do not eat it. A good indication is whether or not the food is served chilled or at room temperature. If served chilled, it is not safe to eat overnight.

you are very likely to get sick from food left out over night. because its not the food that is making you sick. it is the growth of bacteria on the food that is making a person ill. now different foods spoil faster than others because the growth rate of bacteria is different on different foods.
