By the fumes emitted from your exhaust pipes. The more and the darker the smoke the smaller your oil pan is and consequently the more you need to refill.

The easiest way is to consult your owners manual. It will tell you the amount and type of oil need for your particular engine. If you don't have a manual look online somewhere like Autozone or Advance Autoparts websites to find it.
