Many people have used Alka-seltzer, with a combination of vinegar, water and food coloring, to simulate a lava eruption in a man made volcano. Also, you could use the same process inside a balloon to inflate the balloon. There are several other experiments that will use the same expansion properties.

One way to use Alka-Seltzer in a science project is to see what its effects are on different animals. Get some ants, worms, and other insects. Put them in a little water and add the Alka-Seltzer. Then see how long each animal gets put under and then see how long it takes to wake back up.

An easy one you can do is to show how the water temperature affect the rate of a chemical process. With three different temperatures of water, drop an Alka-Seltzer in and time how long it takes to dissolve. Which glass of water finished first? Then chart your results. You can also vary the amount of Alka-seltzer, keeping the temperature constant.

You can use it and other anti-acids to mix with an acid, using indicator to determine the switch from base to acid, to see how much acid the anti-acid will neutralize. Red Cabbage can be made into an indicator.
